In 1923, Shinjiro Torii founded Japan’s first whisky distillery, Yamazaki, with Masataka Taketsuru, a distilling expert from the University of Glasgow. They later established Suntory and Nikka, respectively. Today, Japan boasts eight distilleries, producing remarkable single malts and blends.

Yamazaki’s 12-year-old whisky features meaty fruits with a hint of light peat, while its 1984 vintage, aged in local mizunara oak casks, exudes ginger and incense spiciness. Hakushu distillery, located in Japan’s Alps, offers a 12-year-old whisky that combines ginger, pine, bamboo, mint, and plums.

Nikka’s Yoichi distillery in Hokkaido produces a 15-year-old whisky rich in pears, chocolate, Sherry, spice, and smoke. The Taketsuru Pure Malt 12-year-old, a blend of Yoichi and Miyagikyo malts, offers pears, caramel, and a hint of banana, honouring its founder.

Suntory’s Hibiki 12-year-old blend, combining Yamazaki, Hakushu malts, and grain whisky, includes some malt aged in Umeshu casks. This blend presents a flavour profile of hard candy, spices, ginger, cinnamon, basil, tarragon, pepper, and liquorice, challenging any biases against blends or Japanese whisky.
